Healthy Eating: Sweet & Hot Pork

This recipe is almost like a Mexican Stir-Fry. The heat comes from the salsa, and the sweet from the jelly. Serve it over white or brown rice.

Sweet & Hot Pork

12 oz. lean pork, cut into chunks
1 bell pepper, chopped
1 T. taco seasoning
1/3 - 1/2 c. peach preserves*
8 oz. your favorite salsa
fresh chopped cilantro (about 1 T.)
fresh chopped basil
1/2 t. cumin
1/2 t. chili powder
a few shakes of hot sauce to taste (I use 8 - 10)
1 can black beans, rinsed
1 T. flour
cooked rice

Cook pork & peppers in skillet until done. Mix in all other ingredients. Bring to simmer and cook 5 - 10 additional minutes to allow flavors to blend. Serve over cooked rice.


* I have also used apple jelly, orange marmalade, seedless raspberry preserves, or whatever I have on hand.

  1. You are so right Margery. What shocked me was that a tool so strong and sharp was necessary.

    I never thought to use it for fear that it would scratch the paint finish.

    Often time we fear what God is allowing us to go through for fear that it will hurt; never knowing that the very tool (trial) we fear is the one necessary for our growth.

    God is so amazing in His power. One of the greatest gift of being a Keeper at Home, is the ability to see God in our day-to-day lives, and freely express the joy we get from serving Him.
