Menu Plan Monday: What to do with a huge pork roast

I bought a huge (8.8 lbs.) pork loin last week for about $6. I separated it into one loin roast (in the oven now) bunches of boneless chops (in the freezer) and one big end (in the freezer) which will most likely go into the crock pot at some point in the future. My loin roast will make 2 delicious meals for us this week, not counting all the chops and the end.

Monday
Herbed Pork Roast
Baked Potatoes
Steamed Broccoli & Carrots

Tuesday
Chicken Wraps in Homemade Tortillas
Watermelon

Wednesday
Veggie Lasagna
Fresh Fruit & Green Salad

Thursday
Chopped BBQ Sandwiches
(Make this from Monday's Roast)
Green Salad

Friday

Saturday
Popcorn Shrimp
Corn
Homemade Bread
Mixed Vegetables

Sunday
Waffles
Sausage
Blueberry-Cherry-Vanilla Smoothies

What are you having for dinner this week?

  1. Hi Margery, I just found your site through Melanie's Notes. I will also send it to the Moms & More email newsletter and more people will see it. Anyway, I am going to the beach this week and plan to eat sushi at least 2 nights! I like your menus and look forward to reading more. Good luck w/ the blog!

  3. Hi - I just found your blog through Sarah @ Fiddledeedee Mom. I live in Atlanta too! Funny thing is, we had Pork last week! ALL WEEK LONG! Don't tell me you got it on sale at Kroger too!

  4. Hi Candi,
I bought my pork loin at Publix. (You can see my $12 off deal on the link in my post.) Funny thing is, I had bought a port loin a while back at Kroger, and it was terrible! When I looked back at the package it was labeled something like "Moist and Tender, contains up to 13% saileen solution for flavor enhancement." I was not happy to buy pork loin with that much sodium added, and I was not happy to pay $1.99/lb for salt water. I probably won't buy pork loin from Kroger again, or at least I will pay more attention to the package labeling next time!
